Lobster Bisque (or use any combination of fish)
Makes 4 small servings or 2 bowls
1 c. chicken broth
2 med. onions, sliced
2 tablespoons butter
2 tablespoons flour
2 c. milk
1/2 tsp. salt
1 lb. cooked and cubed lobster meat
(or other firm fish/shell fish)
1/2 teaspoon Worcestershire sauce
1 pinch cayenne pepper (or black)
1. In a small frying pan place 1/4 c. chicken broth and onion. Cover and cook on low heat about 5 minutes.
2. In a medium pot over medium heat melt butter. Slowly whisk in flour. Continue to whisk until a creamy mixture is
created (no lumps)
3. Gradually add the 3/4 c. balance of the chicken broth to the medium pot, whisking constantly. Gradually add the
remaining ingredients, whisking after each . Heat until soup is almost boiling. Do not boil as the milk will curdle.
